Many people do not realize that grains should be soaked or cooked. Porridge oats for example should NEVER be eaten raw. Here is a recipe that requires soaked oats. It is quick, easy and will keep in the fridge for an instant breakfast.
300 g oats or muesli mix
150 g mixed seeds
2 apples or pears, cored and grated
175 ml rice milk
175 ml apple or orange juice
50 g dried cranberries
80 ml maple or agave syrup
1-2 teaspoons cinnamon
1-2 tablespoons dessicated coconut (optional)
Mix together all the ingredients in a large bowl and allow to soak overnight covered in the fridge. You can add whatever fruit, nuts, seeds, yoghurt, sweetener, flax seeds, chia seeds, etc – as you like! Enjoy.
